Potatoes Pudding with Salami
1 kg potatoes, 300-350 g pepperoni or any spicy salami, 4 eggs, 200 g Swiss cheese, salt, black pepper, fresh parsley, 1 tbs margarine Wash, boil, peel and grate the potatoes. Mix with eggs and diced cheese. Add salt and pepper. Grease an oven dish with the margarine and dress it with pepperoni slices. Pour the mixture in. Bake for 30 minutes on medium heat. Caution! The mixture will rise, so use a bigger dish. Take out of the oven and sprinkle chopped parsley. Serve it with pickles or fresh green salad.
